A bunk bed comes apart in a specific order, and getting it wrong racks the frame. Here is the sequence, by bed type, plus how to tell if yours splits into two twins.

Taking a bunk bed apart is not the same job as taking a regular bed frame apart, and the difference catches people out. A bunk is a load-bearing structure. Four posts carry a second mattress and a sleeper eight feet off the ground, and the whole thing stays rigid because the parts brace each other. Remove them in the wrong order and the frame racks sideways while you are still holding a wrench.
Do it in the right order and a wooden bunk comes apart in about forty minutes with one helper. Here is the order.
If the bed has a model number on a sticker, usually under a side rail, note it down. Most manufacturers post the assembly PDF online, and running it in reverse is the safest method there is.
Most use through-bolts into threaded steel inserts, or cam locks and dowels on flat-pack models. Support each panel while you free its last fastener. Wood splits at the screw hole when a panel is left hanging on one remaining bolt, and a split post on a bunk is not a cosmetic problem, it is a structural one. On cam locks, turn a half turn counterclockwise to the open position and stop there, then lift the panel clear. Pull dowelled panels straight apart rather than rocking them, or the dowels snap off inside the hole.
Metal bunks are usually all bolts, which makes them simpler but heavier. Work from the top down and keep the posts braced, because a metal frame with two rails removed will fold. Apply penetrating oil to anything rusted and wait fifteen minutes rather than forcing it. A rounded bolt head on a proprietary frame is a much bigger problem than a delay.
Empty and remove every drawer first, including the stair-tread drawers, then unscrew the drawer slides. Take the staircase off as a unit where you can, since the treads are usually assembled to the stringers with hardware you do not need to disturb. Label left and right slide hardware separately, because they are often not interchangeable.
Sometimes. It depends entirely on whether the bed was designed to convert, and there is a simple way to tell: look at the posts. If each bunk has its own four short legs and the upper simply stacks onto the lower, it is almost certainly convertible, and the manual will say so. If the posts are single full-height uprights that run from the floor past both bunks, it is not. Convertible models usually need a separate set of legs or a conversion kit for the upper bunk, sold by the manufacturer, so check for it before you take anything apart. Non-convertible beds have no legs for the upper half to stand on, and bolting an unsupported frame onto improvised legs is exactly the kind of repair that fails under a sleeping child.
If yours does not convert, the practical answer is two twin beds and a pair of twin mattresses you already own. Bunk mattresses are standard twins, usually in a thinner profile so they sit below the guard rail, which means they drop straight onto a conventional twin frame. Remove both mattresses, then the guard rails, then the ladder, then the upper slats. Take off the upper side rails with a helper bracing the posts, separate the upper assembly from the lower, and finally dismantle the lower bunk like any bed frame. Working top down keeps the structure braced for as long as possible.

Only if the model was designed to. Beds where each bunk has its own four legs usually convert, often with a manufacturer conversion kit for the upper half. Beds built on single full-height posts do not, and improvising legs for the upper frame is not safe. The manual or the manufacturer's site will tell you which you have.
Around forty minutes to an hour for a standard wooden or metal bunk with two people. A model with a staircase, drawers or an under-bed desk is more like ninety minutes, mostly because of the drawer hardware.
If the bunk is coming apart because the kids have outgrown it, the mattresses usually have not. Standard twin mattresses from a bunk work fine on a conventional twin frame, and plenty have years left in them.
