Nolah's identity is AirFoam, its in-house comfort foam developed as an answer to the two complaints people make about memory foam: it sleeps hot and it feels like quicksand. AirFoam cushions the shoulder and hip the way memory foam does, but it springs back faster and does not soften as dramatically with body heat.
What it does well. Pressure relief at the shoulder without the slow-motion recovery, so if you turn over four or five times a night the surface keeps up with you. It also runs cooler than a comparable all-foam memory foam bed, which matters more in Los Angeles than in most of the country, especially in older apartments with no central air. The hybrid models add a pocketed coil unit for real edge support and more airflow.
Where it falls short. It costs more than Nectar at equivalent sizes, and the gap widens as you move up the lineup. It is also harder to try before you buy, because Nolah has very little physical retail presence. And if what you want is the enveloping memory foam hug, AirFoam will feel like it is holding back.
Nectar is one of the brands that made bed-in-a-box shopping mainstream, and it did it by selling an unambiguous memory foam experience at an aggressive price.
What it does well. Motion isolation is excellent. Put a glass of water on one side, get in on the other, and very little travels across. For couples with mismatched schedules that is the whole argument. The contouring is deep and even, which suits back sleepers who want the lumbar curve filled in and side sleepers who want the hip to settle. The price is also hard to argue with: Nectar consistently lands at or below the entry point for a quality foam mattress.
Where it falls short. Heat. Gel infusions slow the warm-up but do not change the fact that dense closed-cell foam restricts airflow, and hot sleepers routinely report the bed is comfortable at midnight and too warm by three. The slow response that creates the hug also creates the stuck feeling combination sleepers dislike, and edge support on the all-foam models is average.
Both work. Nectar gives deeper shoulder and hip relief and will suit you if you stay put most of the night. Nolah suits you better if you shift between side and back, because you will not have to fight the surface to turn. Nolah, and specifically a Nolah hybrid rather than an all-foam model. Coils move air in a way that no foam infusion matches. If you are a serious hot sleeper, honestly, neither all-foam bed is your answer, and you should be looking at hybrids or latex generally. Nectar, for motion isolation, unless one of you runs hot. In that case a Nolah hybrid is the better compromise, because it keeps most of the motion damping while letting heat escape.
Neither brand is a treatment, and persistent pain is a conversation for a doctor rather than a shopping problem. Mechanically, back sleepers usually want a medium-firm surface that stops the hips dropping, which both offer. Side sleepers with hip or shoulder pain want more cushion at those points, which favors Nectar's deeper contouring.

For the price, yes. Nectar delivers reliable memory foam contouring and strong motion isolation at an entry-level to mid-range cost. The trade is heat retention and a slow-response surface that combination sleepers often dislike. If you already know you enjoy sleeping on memory foam, it is a solid value. If you have never liked memory foam, Nectar will not change your mind.

No. Both need a rigid, evenly supporting surface: a platform bed, a solid foundation, or slats spaced no more than about three inches apart. Expect roughly seven to ten years of useful life from either, and see how long mattresses last for the warning signs.
Memory foam is viscoelastic, meaning it softens with body heat and recovers slowly.
